The original Galaxy Tab (Samsung SCH-i800) is operated by Android 2.2 (Froyo) that until now there is no word yet about ability upgrade to a newer version of Android, Android 2.3 Gingerbread or 3.0 Honeycomb. Installation Instructions for Honeycomb on Galaxy Tab
Step 1: Backup everything you care about.
Step 2: You must convert your system to EXT4. There are many methods for doing to, but the easiest two are: Download “Verizon Tab Bootstrapper” from the android market, or install Boushhs’s kernel (http://forum.xda-developers.com/showthread.php?t=941781) which includes a built-in conversion script.
Step 3: Download the current build (download link below).

Step 4: Install zip via recovery and reboot.

- This was tested on a Verizon's Galaxy Tab CDMA version
